Ingredients
- 20 ml margarine
- 15ml olive oil
- 500g chopped unsmoked bacon
- 30g finely chopped chives
- 250g grated cheese
- 4 eggs whisked
- 400ml milk
- 90g flour (sieved)
Method
- Preheat the oven to 180°C
- Fry the onions in the butter and oil in a large frying pan until soft
- Add the bacon pieces to the onions and fry on a high heat to brown the meat, also ensuring that it is cooked.
- Remove from the heat and place it in a bowl to cool down
- Stir in the grated cheese and chopped chives
- In a separate bowl, prepare the batter by mixing the eggs, milk and flour
- Grease an oven proof dish, measuring at 30 cm, with the margarine
- Spoon the bacon mixture in the greased dish and spread the contents evenly
- Pour the batter in and even out the filling
- Bake in the oven for approx. 25 minutes or until the top is golden and the center is cooked
