Durban curry is famous for its vibrant red color, strong masala flavour, and tender meat cooked until it soaks up all that spice.

🍛 Durban Mutton Curry (Traditional Style)
(You can substitute beef or chicken if preferred.)
🛒 Ingredients (Serves 4–6)
Meat & Base
- 1 kg mutton (or lamb), bone-in pieces
- 3 tbsp vegetable oil
- 2 large onions, finely chopped
- 2 tomatoes, grated (or 1 cup canned crushed tomatoes)
- 2–3 potatoes, peeled and halved
Spices
- 2 tbsp Durban curry masala
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- 1–2 tsp chilli powder (adjust to heat level)
- 1 tsp paprika (for colour)
Aromatics
- 1 tbsp fresh ginger, crushed
- 1 tbsp garlic, crushed
- 2 curry leaves (if available)
Other
- 1 cup hot water or stock
- Salt to taste
- Fresh coriander for garnish

1️⃣ Fry the Onions (Very Important Step)
Heat oil in a heavy pot.
Fry onions on medium heat until deep golden brown (not just soft).
This builds the flavour and colour.
2️⃣ Add Aromatics
Add ginger, garlic, and curry leaves.
Cook for 1 minute until fragrant.
3️⃣ Toast the Spices
Add all dry spices.
Cook for 30–60 seconds, stirring constantly so they don’t burn.
This releases their oils and intensifies flavour.
4️⃣ Add Tomatoes
Add grated tomatoes and cook until the mixture thickens and oil begins to separate from the masala (about 5–8 minutes).
5️⃣ Add the Meat
Add mutton and mix well to coat in spices.
Cook uncovered for 10 minutes, stirring occasionally.
6️⃣ Simmer
Add hot water/stock and potatoes.
Cover and simmer on low for 1½–2 hours (until meat is tender and sauce thick).
Stir occasionally.
If using chicken: cook about 40–45 minutes total.
