Here’s a simple recipe for a Cheese, Onion, and Ham Quiche that’s perfect for brunch, lunch, or dinner!

Ingredients:

For the Pastry:

  • 1 ¼ cups (150g) all-purpose flour
  • ½ teaspoon salt
  • 1/3 cup (75g) unsalted butter, cold and cubed
  • 1 egg yolk
  • 2-3 tablespoons cold water

For the Filling:

  • 1 tablespoon olive oil or butter
  • 1 medium onion, finely chopped
  • 1 cup cooked ham, diced
  • 1 ½ cups (150g) shredded cheese (cheddar or a mix of cheddar and mozzarella works well)
  • 3 large eggs
  • 1 cup (240ml) heavy cream or whole milk
  • Salt and pepper, to taste
  • ¼ teaspoon dried thyme (optional)
  • Fresh parsley (optional, for garnish)

Instructions:

Make the Pastry:

  1. Prepare the Pastry: In a food processor, pulse the flour and salt together. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  2. Form the Dough: Add the egg yolk and cold water, one tablespoon at a time, pulsing until the dough begins to come together. If it’s too dry, add a little more cold water.
  3. Chill the Dough: Turn the dough out onto a floured surface, form it into a ball, then wrap in plastic wrap. Refrigerate for at least 30 minutes to rest.
  4. Roll Out the Dough: Once chilled, roll out the dough on a floured surface to fit a 9-inch pie or quiche dish. Press the dough into the pan and trim any excess.
  5. Pre-bake the Pastry: Preheat your oven to 375°F (190°C). Line the pastry with parchment paper and add baking beads or dried beans. Bake for 10-12 minutes. Remove the parchment and beads, then bake for an additional 5 minutes to lightly brown. Set aside to cool.

Make the Filling:

  1. Cook the Onion: Heat the olive oil or butter in a pan over medium heat. Add the chopped onion and sauté for about 5-7 minutes until softened and slightly caramelized. Remove from heat and let cool.
  2. Prepare the Egg Mixture: In a bowl, whisk together the eggs, cream (or milk), salt, pepper, and thyme (if using).
  3. Assemble the Quiche: Sprinkle the diced ham and cooked onions evenly over the pre-baked crust. Then, sprinkle the shredded cheese on top. Pour the egg mixture over the ham, onions, and cheese.
  4. Bake: Bake the quiche in the preheated oven at 375°F (190°C) for 25-30 minutes or until the filling is set and golden on top.
  5. Cool and Serve: Allow the quiche to cool for about 10 minutes before slicing. Garnish with fresh parsley, if desired.

Tips:

  • You can substitute the ham with cooked bacon or sausage for a different flavor.
  • Feel free to add vegetables, like spinach or mushrooms, to the filling for extra variety.
  • The quiche can be served warm or at room temperature.
