Cape Seed Loaf

For those days when you feel like a slice of delicious rustic Cape seed loaf
Cape seed loaf

Ingredients

260 g Whole-wheat flour(2 cups)
100 g Oats (1 cup)
75 g Shelled sunflower seeds ( You can lightly toast them before you add to dough as it softens them and stops them from turning green when you cook it )(1/2 cup)
40 g All Bran Flakes (4 tablespoon)
4 tablespoon Linseed oil
500 ml Buttermilk (Can substitute for Natural Yoghurt or 500 ml full cream milk with 2.5 tablespoon of Lemon Juice)
1 tablespoon Sunflower Oil
tablespoon Honey or Molasses
1.5 teaspoon Bicarbonate of Soda
1 teaspoon Salt

Method

  • Preheat oven to 180 degrees
  • Grease a loaf tin with volume of +/- 1.5 litres
  • Mix flour, oats, sunflower seeds, bran flakes and linseed
  • Beat together buttermilk, sunflower oil, honey, bicarbonate of soda and salt
  • Add this to the flour mixture and mix well
  • Spoon dough into tin and spread evenly
  • Sprinkle with poppy seeds or sesame seeds
  • Bake loaf for +/- 1 1/4 hours until completely done
  • Turn out onto a wire rack and leave to cool
