🍯 Simple Crunchie Honeycomb
Honeycomb is a light, crunchy caramel candy with bubbles inside, often coated in chocolate or eaten in chunks.
🧾 Ingredients
- 200 g (1 cup) caster sugar
- 5 tbsp golden syrup (or light corn syrup / honey)
- 2 tsp bicarbonate of soda (baking soda)
- Optional: pinch of salt

🔪 Instructions
1. Prepare a tray
- Line a baking tray with parchment/baking paper.
- Lightly grease it with oil or butter.
2. Make the caramel
- Put sugar and golden syrup in a saucepan.
- Heat on medium heat, stirring until the sugar dissolves.
3. Let it boil
- Stop stirring and allow it to bubble until deep golden amber (about 3–5 minutes).
4. Add baking soda
- Remove from heat.
- Quickly whisk in the bicarbonate of soda.
⚡ The mixture will foam up dramatically and become airy.
5. Pour and set
- Immediately pour onto the prepared tray.
- Do not spread it, or the bubbles will collapse.
6. Cool
- Leave for 30–45 minutes until hard.
7. Break into pieces
- Smash into chunks and enjoy.
🍫 Optional Chocolate Coating
Melt 200 g milk chocolate, dip the honeycomb pieces, and let them set. This makes them similar to a Crunchie-style treat.
⚠️ Tips
- Use a deep pot — the mixture expands a lot.
- Humidity can make honeycomb sticky, so store it in an airtight container.
- Work quickly once the baking soda is added.
