Here’s a traditional South African Pumpkin Fritters (Pampoenkoekies) recipe🎃 — soft, lightly spiced, and usually served with cinnamon sugar syrup.
🛒 Ingredients (Serves 4–6)
Fritters
- 2 cups cooked pumpkin (mashed & cooled)
- 1 cup cake flour (or all-purpose flour)
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg (optional)
- 2 eggs
- Oil for shallow frying
Cinnamon Sugar Syrup (Traditional)
- ½ cup sugar
- ½ cup water
- ½ tsp cinnamon
- 1 tbsp butter
👩🍳 Method
1️⃣ Prepare the Pumpkin
Cook pumpkin (boil or steam) until soft.
Drain well and mash until smooth.
Let it cool completely before using.
👉 Very important: remove excess moisture so fritters aren’t soggy.
2️⃣ Make the Batter
- In a bowl, mix mashed pumpkin and eggs.
- In another bowl, sift flour, baking powder, salt, sugar, cinnamon, and nutmeg.
- Fold dry ingredients into pumpkin mixture until just combined.
The batter should be thick but scoopable.
If too runny, add a little more flour.
3️⃣ Fry
- Heat oil in a shallow pan over medium heat.
- Drop spoonfuls of batter into the pan.
- Flatten slightly.
- Fry 2–3 minutes per side until golden brown.
- Drain on paper towel.
4️⃣ Make the Syrup
- Combine sugar, water, and cinnamon in a small saucepan.
- Simmer for 5 minutes until slightly thickened.
- Stir in butter at the end.
Drizzle warm syrup over hot fritters.
🍽️ Serve With
- Extra cinnamon sugar
- Whipped cream
- Vanilla ice cream
- Or just enjoy plain with tea ☕
🔥 Tips
- Don’t overcrowd the pan.
- Keep heat medium — too hot burns the outside before cooking through.
- Best eaten fresh and warm.
