Classic South African Banana Bread

Try this easy delicious banana bread recipe

🛒 Ingredients (1 standard loaf)

  • 125 g butter (softened)
  • 1 cup (200 g) white sugar
  • 2 large eggs
  • 3 very ripe bananas (well mashed)
  • 2 cups (250 g) cake flour (or all-purpose flour)
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup milk
  • 1 tsp vanilla extract (optional)

👩‍🍳 Method

1️⃣ Prep

  • Preheat oven to 180°C (350°F).
  • Grease and line a standard loaf tin.

2️⃣ Cream Butter & Sugar

Beat butter and sugar until light and fluffy.


3️⃣ Add Eggs & Banana

  • Add eggs one at a time, beating well after each.
  • Stir in mashed bananas and vanilla.

Don’t worry if it looks slightly curdled — that’s normal.


4️⃣ Add Dry Ingredients

  • Sift flour, baking soda, and salt together.
  • Fold into mixture alternately with milk.
  • Mix gently until just combined.

5️⃣ Bake

  • Pour into loaf tin.
  • Bake 50–60 minutes until a skewer inserted in the centre comes out clean.

Cool in tin for 10 minutes before turning out.
