🛒 Ingredients (1 standard loaf)
- 125 g butter (softened)
- 1 cup (200 g) white sugar
- 2 large eggs
- 3 very ripe bananas (well mashed)
- 2 cups (250 g) cake flour (or all-purpose flour)
- 1 tsp baking soda
- ½ tsp salt
- ½ cup milk
- 1 tsp vanilla extract (optional)
👩🍳 Method
1️⃣ Prep
- Preheat oven to 180°C (350°F).
- Grease and line a standard loaf tin.
2️⃣ Cream Butter & Sugar
Beat butter and sugar until light and fluffy.
3️⃣ Add Eggs & Banana
- Add eggs one at a time, beating well after each.
- Stir in mashed bananas and vanilla.
Don’t worry if it looks slightly curdled — that’s normal.
4️⃣ Add Dry Ingredients
- Sift flour, baking soda, and salt together.
- Fold into mixture alternately with milk.
- Mix gently until just combined.
5️⃣ Bake
- Pour into loaf tin.
- Bake 50–60 minutes until a skewer inserted in the centre comes out clean.
Cool in tin for 10 minutes before turning out.
