🍽️ Traditional South African Bobotie Recipe
Ingredients
For the meat mixture
- 500 g minced beef (or lamb)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 slices white bread
- 120 ml (½ cup) milk
- 2 tbsp curry powder
- 1 tbsp fruit chutney (often Mrs Ball’s Chutney)
- 1 tbsp apricot jam
- 1 tbsp vinegar or lemon juice
- 2 tbsp raisins or sultanas
- 1 tbsp tomato paste
- 1 tsp turmeric
- Salt and pepper to taste
- 1 tbsp oil or butter
- 2 bay leaves
For the topping
- 2 eggs
- 120 ml (½ cup) milk
- Pinch of salt

👨🍳 Instructions
1. Soak the bread
- Soak bread in the ½ cup milk.
- Squeeze lightly and keep the milk for later.
2. Cook the base
- Heat oil in a pan.
- Fry onion and garlic until soft.
3. Brown the meat
- Add minced meat and cook until browned.
4. Add flavorings
Stir in:
- curry powder
- chutney
- apricot jam
- vinegar
- tomato paste
- turmeric
- raisins
- soaked bread
Season with salt and pepper.
Simmer for 5–10 minutes.
5. Bake
- Transfer mixture to a baking dish.
- Smooth the top.
6. Make custard topping
- Beat eggs + milk + pinch salt.
- Pour over the meat.
7. Add bay leaves
- Place bay leaves on top.
8. Bake
- Bake at 180°C (350°F) for 30–40 minutes until the topping is set and golden.
🍚 How it’s traditionally served
- Yellow turmeric rice
- Chutney on the side
- Sometimes sliced banana or coconut
✅ Tip: Bobotie tastes even better the next day because the spices develop.
