Mealie Bread

Mealie bread is a traditional South African bread made from mealies, known as corn or maize in other parts of the world.

Mealie bread made with raw kernels

Ingredients

  • 3 cups white flour
  • 5 teaspoons white sugar
  • 1 teaspoon salt
  • 5g instant dried yeast (or half a packet)
  • ½ cup fresh yellow sweetcorn (cut off the cob)
  • 1 cup of lukewarm water

Method

  • Mix all ingredients together in a large mixing bowl, until it forms dough, taking care to add the water slowly at the end so it doesn’t become to wet.
  • Knead for only one minute.
  • Put into a greased 20cm (8″) loaf tin and leave in a warm place covered with a damp tea towel for about 1 hour, or until double in size.
  • Then place in a pre heated oven (180ºF) for about 1 hour, or until golden brown.
  • This delicious mealie bread is lovely when eaten warm and drizzled with butter

Mealie bread with cream style sweetcorn

Makes one large loaf or two smail ones

Preparation time: 10 minutes

Cooking time: 1½ hours

Ingredients

  • 2 eggs
  • 125 ml milk
  • 1 x 410g tin of cream style sweetcorn
  • 250g mealie meal
  • 250g cake flour
  • 15 ml baking powder
  • a pinch of salt
  • 2 tablespoons sugar
  • boiling water

Method

  • Beat the eggs, milk and the sweetcorn together.
  • Sift in the mealie meal, cake flour, baking powder, salt, and mix together.
  • Pour the into a greased bread loaf tin. Two smaller ones can be used instead well.
  • Cover the tin with tin foil and secure with string.
  • Place the loaf tin into a large saucepan that has been filled with about 5 cm of boiling water.
  • Cover the saucepan and steam at a moderate heat for 1 and a half hours. Check every now and again if water needs to be added.
  • Insert a knife into the bread to test if done. If the knife is clean when removed then the mealie bread is ready.
  • Best to eat warm with plenty of butter.
